
Double MICHELIN-Starred Chef Giorgio Servetto
Double Michelin-starred Italian chef Giorgio Servetto will lead a series of exclusive culinary events at two underwater restaurants operated by Atmosphere Core in the Maldives this May. Chef Servetto will present a “Garden-to-Sea Immersion” concept focused on circular cuisine and zero-waste principles. The programme will take place at Only BLU at OBLU SELECT Lobigili from 7–9 May 2026, followed by M6m (Minus Six Meters) at OZEN LIFE MAADHOO from 12–14 May 2026.
The collaboration will also include a signature Crab Dinner Experience at HUDHU BAY, located at OZEN LIFE MAADHOO.
At both underwater restaurants, Chef Servetto will present a five-course menu for lunch and dinner, developed in collaboration with the Atmosphere Core culinary team. The menus will emphasize island-grown and locally sourced ingredients, including hydroponic greens cultivated on Maadhoo Island, vegetables from local farms, and sustainably sourced seafood from the Indian Ocean.
“Creativity begins with listening—to the land, the sea, and what they give you,” said Chef Servetto. “My cuisine is about simplifying. When ingredients are respected fully, flavor becomes clearer. Bringing this experience to the Maldives with Atmosphere Core, especially in an underwater setting, is particularly exciting.”

Originally from Liguria, Italy, Chef Servetto is known for a disciplined and ingredient-focused culinary approach. He is currently the only chef in Liguria to hold both a Michelin Red Star and a Michelin Green Star, recognizing both culinary excellence and sustainability. He is also the only chef in the region to have received Michelin Red Stars at two different restaurants.
According to Atmosphere Core, the collaboration reflects the company’s broader effort to integrate sustainable and circular dining practices across its resort portfolio.

The events will take place at two of the Maldives’ best-known underwater restaurants. Only BLU, located at OBLU SELECT Lobigili, is among the largest under-ocean dining venues in the Maldives, while M6m (Minus Six Meters) at OZEN LIFE MAADHOO offers an intimate dining setting six meters below the ocean surface.
Both resorts are located on a short speedboat transfer from Velana International Airport, providing convenient access for visiting guests.
