India – Tamra atShangri-La’s – Eros Hotel hosts ’Canadian Culinary Week’ by Chef Quentin Glabus

Hotel
, jointly with the High Commission of Canada. The man of the hour was Chef Quentin Glabus, the Canadian Aboriginal Chef who was at Tamra specifically for the duration of the Canadian Culinary Week.

What exactly is Canadian cuisine? This was the key
question on top of my mind when I headed out for the twise-cooked-lambCanadian Culinary Week’  organized at Tamra, the multi-cuisine dining restaurant at Shangri-La’s – Eros Hotel, jointly with the High Commission of Canada. The man of the hour was Chef Quentin Glabus, the Canadian Aboriginal Chef who was at Tamra specifically for the duration of the Canadian Culinary Week.

He prepared two popular dishes in his Master Class – Charred Sweet Potato with Maple Whiskey Glaze, Lebna, Blueberries and Crispy Chickpeas, and Twice Cooked Lamb Chops, Butter Nut Squash Sauce. The Maple syrup he used was especially from Canada, and pure. It did taste different, a little smokier as compared with the brands on the shelves in local stores. He pointed out that most manufacturers tend to substitute maple syrup with corn syrup. We are posting the recipes of the above two on our Twitter, Instagram and Facebook accounts.
