India – Diverse Indian Flavors at INDY by Qla

South Delhi’s one-year old eatery INDY by Qla at Eldeco Center in Malviya Nagar, true to its name, is all about revival of long-lost recipes of Indian cuisine, from across the complex and diverse food traditions of India. This includes royal feasts, festival cuisine and home-style cooking, not forgetting the amazing street food of India. INDY by Qla is founded by Ranjan Chopra, the man behind the hip Qla restaurant in Mehrauli’s style mile which is known for its European cuisine.

Lamb Shank

The restaurant’s culinary team, led by Head Chef Manish Kumar, has travelled extensively to places like Punjab, Amritsar, and Jammu and Kashmir, exploring regional specialties and incorporating them into the menu. Do check out the Lamb Shank, which is ‘nalli nihari’ with an Assamese twist, using fermented chilli and eggplant, to bring smoky flavour to the curry. The Nadru Galouti blends the meaty texture of Awadhi galouti kebabs with the delicate flavours of Kashmir’s lotusstem, creating a vegetarian dish that’s as rich and satisfying as its non-vegetarian counterpart. Each dish is rooted in authenticity, prepared with the freshest ingredients, offering a modern fusion of traditional Indian cuisine. The highlights of the street food is Kacche Aam ki kachori, Bombay Bhel, Avocado Chaat, and some more. Looking ahead, INDY by Qla has plans to explore India’s regional culinary diversity through exclusive food festivals. This December, guests can look forward to a Kashmiri Food Festival. Next, a Bihari Food Festival.

Kacche aam ki kachori

The cocktail menu is curated by Head Mixologist Ganesh Kumar, who infuses the flavours of traditional Indian spices and herbs. There’s live music to enhance the ambiance, giving a suitable platform for emerging Indian artists.

Kuti mirch ka chicken tikka

The restaurant’s elegant interiors and décor pay homage to sustainability and the local craft heritage with Mandala art, handmade furnishings, use of travertine stone and carved Oakwood timbers.
