Silken Smoke

The menu features five signature cocktails, each inspired by a specific region or cultural reference:

  • Forest Bloom blends raw mango and curry leaves, referencing natural fermentation practices of the Himalayan region.
  • Cashew Coast combines coconut water and jaggery, evoking the coastal flavours of Goa.
  • Silken Smoke pairs well with tandoori dishes, featuring smoked fruit and spice notes.
  • The Spice Route uses star anise, clove, and warm infusions to reflect India’s historical role in global spice trade.
  • Sunset Sherbet offers a bittersweet profile with saffron and honey, inspired by traditional Indian desserts.

The cocktails are designed to complement Diya’s Northwest Frontier cuisine, particularly dishes like the slow-cooked Raan-e-Diya, known for its layered flavours and richness.

With this new menu, Diya continues its effort to reinterpret Indian culinary traditions through a modern and regionally rooted approach.
